Chef and Restaurant Level 1
The course is aimed at those who wish to have a career in hospitality, professional cookery or food and drink services. It will allow you to experience working in the hotel, restaurant and tourism industries and develop practical skills in hospitality operations. In addition you will develop your maths and English skills.
You will learn about health and safety, a range of food preparation skills, customer service and table service. You will be involved with internal and external customers in the provision of food and drink, including front of house and kitchen. You will learn a range of food preparation and service skills including plate clearing, cashiering and bar work.

You will learn about health and safety, a range of food
preparation skills, customer service and table service. You will be
involved with internal and external customers in the provision of
food and drink, including front of house and kitchen. You will
learn a range of food preparation and service skills including
plate clearing, cashiering and bar work.
Teaching methods include lectures, presentations, demonstrations,
micro teaching, workshops, drop-ins and tutorials. Coursework and
portfolios will be compiled and mini cookery projects set. Work is
assessed by observation. You will have a personal tutor who will
check your progress and work and class tutors will manage pair work
groups work placements and visits.
The course is taught in the College’s fully functional hospitality kitchen and restaurant; a realistic modern environment. Our staff are trade experienced with a full range of skills and knowledge. The College has strong links with local industry and you may acquire work placements and employment through our contacts. You will be part of a dynamic and exciting environment and gain the opportunity to progress to the next level.
