The Diploma in Professional Cookery is for anyone who works or wants to work as a chef in the catering and hospitality sector.
The content of this qualification will ensure that learners build on the foundation skills developed in the level 1 Certificate or within the workplace. Learners will be able to prepare and cook a range of commodities. Whilst the investigative and theoretical units provide a broad understanding of all aspects of kitchen operations, essential for those aspiring to work in the industry.

•Investigate the catering and hospitality industry •Food safety in catering •Health & safety in catering and hospitality •Healthier food and special diets •Catering operations, costs and menu planning •Applying workplace skills •Prepare and cook stocks, soups and sauces •Prepare and cook fruit and vegetables •Prepare and cook meat and offal •Prepare and cook poultry •Prepare and cook fish and shellfish •Prepare and cook rice, pasta, grains and egg dishes •Produce hot and cold desserts and puddings •Produce paste products •Produce biscuit, cake and sponge products •Produce fermented dough products
Entry Requirements
Four GCSE grade D, to include English, Mathematics at Grade D or above as a minimum. •Or a Diploma in Introduction to Professional Cookery Level 1 (C&G 7100) •All applicants will be interviewed
Delivery & Assessment methods
The programme will be delivered in our outstanding Hospitality & Culinary Arts Directorate. You will have access to the latest state of the art commercial learning environment. You will have the opportunity to work on the latest Samsung SMART Technology devices to help underpin the knowledge components of the training programme
Progression
On completion of this qualification candidates may progress into employment/apprenticeship programme or on to the following qualifications: • City & Guilds Level 3 Diploma in Advanced Professional Cookery
