The Professional Cookery Diplomas are supported by People 1st and the National Skills Academy for Hospitality as the key chef qualifications to enter the workforce.

Typically, students completing the level 1 Diploma stay in college and progress to a level 2 Diploma. If directly entering the sector, they would normally enter at a lower level such as a commis chef or become an apprentice.

What qualifications or skills do I require to study this course?

What does the course involve?

The Level 1 Diploma in Introduction to Professional Cookery has been designed to be taught full-time in college in one academic year. It is made up of 12 units, all of which have to be covered. It is assessed through course work, theory and practical tests. Students will be working in the commercial areas of the college, Indulge Restaurant, catering events and The Bistro, on a rota. Some evenings will be required.

WYou will study the following units:

• Food safety in catering
• Introduction to the catering and hospitality industry
• Health and safety awareness for catering and hospitality
• Introduction to healthier foods and special diets
• Introduction to kitchen equipment
• Introduction to personal workplace skills
• Prepare and cook food by boiling, poaching and steaming
• Prepare and cook food by stewing and braising
• Prepare and cook food by baking, roasting and grilling
• Prepare and cook food by deep frying and shallow frying
• Regeneration of pre-prepared food
• Cold food preparation

What option will be open to me if I successfully complete the course? Upon successful completion of this course, students can progress onto the following: Level 2 Diploma in Professional Cookery Level 2 Food & Beverage Service Level 2 Apprenticeship in Hospitality & Catering (Professional Cookery)
