This practical programme consists of Level 1 and 2 qualifications, equipping students with culinary skills and food service techniques. Delicious subjects include pastry and dough, meat, fish and vegetable cookery, team skills, wine appreciation and table theatre techniques. Students will be assessed on practical performance and written assignments. Work experience may be part of the programme and there may be opportunities to experience food and culture in another European country.
The Programme Content
This practical programme consists of Level 1 and 2 qualifications, equipping students with culinary skills and food service techniques. Delicious subjects include pastry and dough, meat, fish and vegetable cookery, team skills, wine appreciation and table theatre techniques. Students will be assessed on practical performance and written assignments. Work experience maybe part of the programme and there may be opportunities to experience food and culture in another European country.
Entry Requirements
Preferably Four GCSEs at grade D or above including Maths and English. Students will also be asked to complete a literacy test to ensure that they can cope with the demands of an assessed assignment based programme.
Costs
Protective clothing and equipment will cost approximately £250. There may be some costs involved with work experience and educational visits*.

Progression
On successful completion of the Level 2 programme students can progress to the Level 3 Diploma in Advanced Professional Cookery or enter employment as a professional trainee chef/waiter.

Two years.
