  • Preparing cakes, pastry and desserts
  • Preparing and cooking pasta
  • Cooking soups and sauces
  • Food safety & hygiene

Entry requirements You must be employed in an establishment that prepares a range of fresh food for at least 30 hours/week. Who is it for? The Diploma in Professional Cookery is for anyone who wants to train to become a chef in the catering and hospitality sector for example:

  • (Trainee) Commis Chef
  • (Junior) Chef De Partie

Duration 12 to 16 months Start date Available all year Assessment method You will put together a portfolio of evidence that will be assessed using a range of methods. Observation of real work will be used for all competence based units, in addition you will be asked to provide witness testimony and discussion and carry out knowledge based questions. Personal qualities To work in a catering environment you will need to have the following personal qualities:

  • Team worker
  • Good Practical Skills
  • Good personal hygiene and hygiene procedures
  • Punctual and reliable
  • Able to follow instructions

Further progression Once you have completed your Apprenticeship you can look at moving on to level 3 Diploma Professional Cookery dependent on your job role.
