Entry requirements You must be employed in an establishment that prepares a range of fresh food for at least 30 hours/week.You also need to be taking an active role in supervising the kitchen. Who is it for? The Diploma in Professional Cookery is for anyone who works or wants to work as a chef in the catering and hospitality sector for example:

  • Chef De Partie
  • (Junior) Sous Chef
  • Head Chef

Total People require learners/employers to cover the cost of the whole qualification. A 24+ Advanced Learning Loan can be applied for through Student Finance England.

Duration 16 to 20 months Start date Available all year Assessment method You will put together a portfolio of evidence that will be assessed using a range of methods. Observation of real work will be used for all competence based units, in addition you will be asked to provide witness testimony and discussion and carry out knowledge based questions. Personal qualities To work in a catering environment you will need to have the following personal qualities:

  • Team worker
  • Good Practical Skills
  • Good personal hygiene and hygiene procedures

Further progression Once you have completed your Advanced Apprenticeship you can look at developing your managerial skills through a Management qualification.
