Outline programme The qualification covers the following topics: Legislation Food safety hazards Temperature control Refrigeration, chilling and cold holding Cooking, hot holding and reheating Food handling Principles of safe food storage Cleaning Food premises and equipment Qualification information Designed for anyone working in the catering industry where food is prepared, cooked and handled.

Additional Notes

Generally, this course requires one day college attendance, between 09:00-17:00. If you have concerns about written or spoken English and feel you need support to complete this course please enquire at least 14 days before the training day so we can identify any appropriate arrangements that can be made. Full payment of course fees is required before you attend the course. Materials fees are levied for the handbook which is sent out before the course starts and you will be required to bring it with you on the day of your course.

Entry Criteria

This is an open access course; you will not be required to possess any previous qualifications or knowledge of food hygiene. You will not necessarily need to be working in a catering establishment in order to enrol on the course. It is essential that you bring along photographic ID (passport, driving licence) on the day of the course to satisfy requirements of the awarding body. Failure to provide will result in you being unable to take the examination. All applications must be made through the course administrator, Deborah Leaney, on 01242 532112
