Develop your skills knowledge and experience by doing the Level 2 Professional Chef’s Diploma. It builds nicely on the skills acquired at level 1 so you can start a career or aim for an advanced-level qualification.
This course is made up of fourteen units. In the practical units, you learn to cook meat, poultry, fish, sauces, stocks and vegetables. In the theory units, you cover topics such as health and safety, kitchen operations, and workplace skills. You also undertake the level 2 Diploma in Professional Food and Beverage Service where you will further develop skills gained at level 1, including silver service skills.

Working in our modern kitchens and restaurant and bar help you to further develop your communications, organisational, team working and interpersonal skills. Other gains include improved time management skills, the experience of working under pressure, and a degree of supervisory work.
Applicants for a level 2 programme will normally have:
- at least four GCSEs at grade D or above and/or a completed level
1 award
- GCSEs to include English and maths at Grade D or above or level 1
Functional Skills qualifications
- the willingness to study for an additional qualification in
English and/or maths

Applicants will be invited to attend an interview and complete an
internal assessment. All students will have their literacy and
numeracy needs supported within the programme.
Successful completion can take you to the City & Guilds NVQ 3 Advanced Professional Cookery course or the Level 3 Diploma in Hospitality Leadership and Supervision. Alternatively, you could enter the hospitality industry at a qualified operational level.
You receive continuous, individual assessment of your practical
skills and we will also test your theoretical knowledge. Your tutor
monitors your progress and will guide you to ensure you achieve the
most from your study.
You learn by doing practical activities working in our on-campus
kitchens and restaurants, and by taking on some supervisory
responsibilities. All of this takes place in a realistic working
environment.
