Description
What is the course about?Students will make their own royal icing to practise piping in a
variety of decorative ways; Cornelli work, brush embroidery and
piped embroidery. They will also have the opportunity to use some
or all of the techniques to decorate a cake.
At the end of the course students should be able to;
Make royal icing to the correct consistency for piping.
Identify the correct piping nozzles for each technique.
Transfer a pattern onto a cake for piping over.
Demonstrate piping onto the top and sides of a cake.

What is your approach?
The tutor will demonstrate the techniques and the students will
have plenty of opportunity to practise themselves. The tutor will
be on hand to offer support and advice and there will be a
selection of books and magazines available for students to refer to
for decorating ideas.
Students will be able to discuss their individual progress with the
tutor.

What will I need?
For the first session students will need to bring;
A pen and paper
An apron
250g icing sugar
2 tsps Meri-White/Omni -White (Can be purchased from the tutor on
the night ) 50p
Parchment paper ( Can be purchased from the tutor on the night)
No. 1.5 / 1 piping nozzles (if you have them)
A 15/20cm thin cake board covered in sugar paste 24 hrs in
advance.
A box to put the board in
A pencil
Are there any other costs?
Students will need a small quantity of royal icing for each
lesson.
Students may wish to make/ buy a cake to decorate in the final
lesson.
