These qualifications have
been developed to address the growing need to make learning more
relevant to specific business environments and meet the National
Occupational Standards.
Everyone who works with food has a special responsibility for safeguarding the health of consumers and ensure that the food they serve or sell is perfectly safe to eat.
This course provides fundamental food hygiene knowledge for all food handlers.
It is a legal requirement for the operator of a food business to ensure that all food handlers engaged in the food business are supervised and instructed and/or trained in food hygiene matters appropriate with their work activities.
The appropriate level of knowledge required to meet the legal requirements will vary depending upon what level of work activity is carried out by the food handler and should be in fitting with the level of knowledge and competence required to perform the activity safely
The qualification covers the following topics;
- Introduction to food safety
- Food safety hazards
- Temperature controls
- Refrigeration, chilling and cold holding of foods
- Cooking, hot holding and re-heating of foods
- Food handlers
- Principles of safe food storage
- Cleaning
- Food premises and equipment.
