You are going to coat and decorate 1 square cake or dummy using
your own design.

• Microdots and graduated line work (including sides)

• Piped decorative lettering

• Simple pressure piping e.g. birds, flowers, bows etc.
Modelling Techniques for Cake Decoration
You are going to experiment with a range of modelling pastes to
produce simple 2D and 3D models which you will display in an
appropriate way.
• Cutting

• Shaping
• Forming
• Textured rolling pins
• Any other appropriate skills
Produce Novelty Cakes
You are going to coat and decorate a novelty cake to a brief
provided by your tutor/trainer. It can be of any shape, and you are
going to design the cake yourself to include 2D and 3D
decoration.
• Crumb sealing
• Shaping and forming base cakes
• Assembly
Finish the cake in line with the brief and your design to a neat
and saleable finish making sure that you demonstrate your skills in
a range of techniques to include
• Modelling, shaping and forming embellishments and cake
ornamentation
• Piping
• Rolling
• Cutting
• Colouring
How you will gain the qualification

Entry requirements are progression from a Level 1 Cake decoration program or relevant industry experience.
