Celebration Cakes
You are going to decorate 2 different celebration cakes, one of
which must be tiered and 1 centrepiece using your own
designs.
Once you have decided on the occasions for your cakes and
centrepiece, prepare at least THREE designs for TWO different
celebration cakes and ONE centrepiece using technical aids such
as
• Standard drawing equipment
• Templates
• ICT design software
Your designs can be produced as hand drawn designs, stencils or
with the aid of ICT

technical aids such as
• Standard drawing equipment
• Templates
• ICT design software
Your designs can be produced as hand drawn designs, stencils or

REMEMBER ONE of your three designs needs to be tiered
Across your designs, you must incorporate the following
skills

• Bas relief
• Airbrushing and painting
• Balance and proportion

• Use of Tiers – one cake must be tiered ( at least 2

Advanced Modelling Techniques for
Cake Decoration
You are going to experiment with a range of modelling pastes to
produce and display TWO competition/exhibition standard 3D models.
Each model should be made from a different paste
Create TWO 3D models using appropriate techniques to
include
• Use of moulds
• Use of hand rolling and modelling
• Use of cutting out
• Use of colouring
• Assembly and construction techniques
• Consideration of balance and proportion
Produce Display Pieces in Chocolate
You are going to produce 2 centrepieces in chocolate, using your
own designs. One of your pieces needs to be a traditional design
and one needs to be a contemporary design. You are going to present
them in exhibition style.
DESIGNING YOUR DISPLAY PIECE IN CHOCOLATE
Design TWO centrepieces in chocolate. One needs to be a
traditional design and one needs to be a contemporary
design.
Produce a specification for your designs which will enable you
to demonstrate the following
• modelling, moulding, shaping, cutting, construction and
adhesion techniques
• colouring and marbling
• use of ancillary aids and equipment, such as cooling sprays,
templates and stencils
• preparing chocolate for a variety of specialist uses
• using both science and art in design and construction
Design and Decorate a Tiered Wedding Cake
You are going to design and decorate a tiered wedding cake to a
neat and saleable finish. The number of tiers is up to you as the
designer.
Produce a design as a working drawing for a tiered wedding cake,
using technical aids such as
• Standard drawing equipment
• Templates
• ICT design software
Your designs can be produced as hand drawn designs, stencils or
with the aid of ICT
Ensure that your design incorporates the following
skills
• Advanced piping
• Airbrushing and painting
• Balance and proportion
• Application of colour theory
• Construction techniques for tiers
For all the above units
Use equipment safely, display your finished products, store your ingredients and finished products correctly, performed all tasks safely and hygienically.
