Who is this course for?
This course is ideal for students who have previous skills, knowledge and experience in Sugarcraft,
who would like to take their skills to a higher and more professional level.
What are the entry requirements?
This course is suitable for students who have completed either the Level 1 or Level 2 NCFE Award
in Creative Craft (Sugarcraft), or who have equivalent knowledge and experience.
What will I study?
You will explore many different aspects of Cake Decoration, including research into contemporary/historical sugarcraft trends, how to create appropriate designs, work within health & safety guidelines and do costings (so you can work out how much to charge). You will learn how to use a range of specialist tools & techniques, then use them to develop your own individual designs.Each session will be structured around specific tasks linked to the NCFE Qualification. The course will cover a variety of techniques to create designs suitable for Wedding sugarcraft in traditional and contemporary styles. You will learn how to work with sugarpaste, chocolate, fresh cream, buttercream, and marzipan. You will design and make a range cake tops, learn how to create wired and unwired flowers, and flower sprays. You will explore a range of techniques including pleating, brush embroidery and smocking. You will also learn how to do accurate costings, how to box for delivery and explore a range of business skillsin the ‘enterprise’ module, to discover more about this profession. You will explore ways to assemble and create a professional display for potential clients.
There are four mandatory units for this Qualification; on completion of all four you will be
awarded the NCFE Level Two Certificate in Creative Craft (Sugarcraft for Weddings)
By the end of the course you will be able to:
Carry out research to support your studies– to source ideas, discover the history of sugarcraft and for fun and inspiration
You will know how to progress ideas into finished designs
Successfully decorate Wedding Cakes and make Sugar Flowers and accessories.
You will have completed a portfolio of work
You will have learned a wide range of techniques; know what tools and equipment are
suitable for different projects, and know how to use them safely and effectively.
You will know how to work to a brief in a professional manner
You will be able to work independently to design and create your own Sugarcraft for Weddings projects. You will be able to calculate accurate costings
You will know how to work to a professional standard at all times.
How is the course taught?
The tutor will do an initial assessment (an individual learning plan) to discover your starting point, find out what you want to get out of the course, take any previous knowledge you have into account, and plan how best to support you. She will demonstrate techniques, show inspiring examples and provide hand-outs to support your learning. You will learn by experience, demonstration, group work - and lots of practice! You will build up a portfolio of work, which will include pictures, your notes, sketches & research, plus self & tutor assessment records.

Full Fee (Full fees for courses of 15 weeks or more can be paid in two instalments. You must include the first half with your enrolment)

Fee B

If you are:

  • aged 16-18 years old on an accredited course
  • on Job Seeker's Allowance or on Employment Support Allowance (Work-Related Activity Group)
  • unemployed and in receipt of a means tested benefit (or are dependent of someone who is unemployed and in receipt of a means tested benefit) and sign a Declaration of Intention to enter employment
  • aged 19-23 studying for a first full Level 2 qualification and do not already have a full Level 2 qualification or equivalent
  • aged 19-24 studying for a first full Level 3 qualification and you do not already have a full Level 3 qualification or equivalent
  • studying GCSE English or maths and do not already have a grade C or above
  • studying an accredited English or maths course
  • studying an entry or Level 1 accredited course and are aged 19-23 and have prior attainment below full Level 2. (This does not apply to ESOL courses)
  • taking part in a Family Learning activity

Fee C

Exam fees are non-refundable and payable at enrolment. In some cases exam fees are to be confirmed.
